Well, the first snow fall hit us and as usual, it wasn’t much and didn’t last. We were, however, a house divided. My husband woke up, looked out the window and crawled back in bed . I got up and poured a cuppa and tried to enjoy the beauty. The dogs headed out the back to do their business. Wally was thrilled with the snow but Bogey couldn’t get back in the house quick enough. Whether you enjoyed a wee bit of white or crawled back in bed or snuggled by a fire, I imagine that a good dose of comfort food is something we can all agree on. Here are a few ridiculously easy recipes that are sure to warm your tummy. Wishing you all well.

Potato Soup

Ingredients

1 (32 oz.) bag frozen hash browns
1 (32 oz.) box chicken broth
1 (10 oz.) can condensed cream of chicken soup
1 (8 oz.) package cream cheese, softened
1 1/2 cups Italian Blend shredded cheese (provolone, asiago, parmesan, romano)
1/4 cup crumbled bacon, or real bacon bits
kosher salt and freshly ground pepper, to taste

Directions

  1. Combine hash browns, shredded cheese, chicken broth, cream of chicken soup, bacon and cream cheese in slow cooker.
  2. Season with salt and pepper, then use a spoon to break up cream cheese and mix things together.
  3. Place lid on slow cooker and cook on HIGH for 3 hours, stirring occasionally, or until potatoes are tender.
  4. Taste and adjust seasoning, if necessary.
  5. Serve hot and enjoy!

Easy Chicken and Rice

Ingredients

Cooking spray

2 cups long grain white rice

1(10.5-oz.) can cream of chicken soup 

1(10.5-oz.) can cream of mushroom soup

I cup chicken stock 

boneless skinless chicken breasts (three large breasts)

Kosher salt

Freshly ground black pepper

1(1-oz.) package onion soup mix

Directions

  1. Preheat oven to 350° and grease a 9”-x-13” baking pan with cooking spray. In a large bowl mix together rice, soups, chicken broth, and soup mix then pour into baking dish. 
  2. Season chicken with salt and pepper then place on top of rice mixture. Cover with aluminum foil and bake 1 hour and 15minutes, or until chicken is cooked through and rice is tender.

Chicken Salad This one may not warm your tummy but it is OH SO GOOD!

Ingredients

  • 4 cups cubed, cooked chicken meat
  • 1 cup mayonnaise
  • 1 teaspoon paprika
  • 1 ½ cups dried cranberries or dried cherries
  • 1 cup chopped celery
  • 2 medium green onions, chopped
  • ½ cup minced green bell pepper
  • 1 cup chopped pecans
  • 1 teaspoon seasoning salt
  • ground black pepper to taste 

Directions

In a medium bowl, mix together mayonnaise with paprika and seasoned salt. Blend in dried cranberries, celery, bell pepper, onion, and nuts. Add chopped chicken, and mix well. Season with black pepper to taste. Chill 1 hour.
