A Wee Rest and Dinner for Two is what She Needed

I am learning that taking a rest now and again is a good thing, although I usually only last about seven minutes before I am back up and going.  I have never been one to sit.  Today however, an uncomfortable eye infection coupled with a bee sting to the ear gave me reason to “enjoy” a wee rest.  Not feeling like  going to the store, I used what I had on hand and came up with a tasty dinner for two including dessert.  Bon Appetit!

Flounder with Pesto, Garlic, and Lemon;


6 ounces frozen flounder, about 1/2 inch thick ( use most any fish that trips your trigger here)

2 tablespoons lemon juice (fresh squeezed)

1/2 teaspoon black pepper

1 tablespoon minced garlic

1/4 cup Costco Basil Pesto (or a bit more if you are a pesto lover like me)


  1. Thaw fish, if frozen. Rinse fish; pat dry with paper towels. Place two fillets on a square of heavy foil.
  2. In a small bowl stir together lemon juice, pepper, and garlic; spoon over fish. Top with pesto. Bring together two opposite edges of foil and seal with a double fold. Fold remaining ends to completely seal, allowing space for steam to build. Place foil packets on a jellyroll pan (any pan with sides will do just incase the packets leak)
  3. Bake in a 400 degree F oven about 15 minutes. Open packets to allow steam to escape. Transfer fish to plates and serve.

I served this dish with a side of rice and peas.  Very simple and yummy!  For the dessert, I used the Galette recipe on this blog and substituted red and green apples for the fruit.
