She is getting ready for Galentines…a better version of Valentines!

Every year my girlfriends (GALS) and I get together around Valentines (thus Galentines). I am not a fan of Valentines Day. It serves no purpose but to put unnecessary pressure on folks to express their undying love to one another through the purchase of overpriced chocolates, flowers and cards (Which my husband gladly does whether I like it or not). This years theme for our get together is a Galentines Fiesta! Below are a few of the wonderful yummies we will share as we play games, tell stories, and revel in our awesomeness.

Blood Orange Margaritas (single serving)
◾2 ounces silver tequila (blanco)
◾2 ounces fresh blood orange juice (about 1 large blood orange)
◾1 ounce fresh lime juice (about 1 lime)
◾1 teaspoon light agave nectar
◾1 wee drop pure vanilla extract (optional but it really makes the drink)

◾kosher salt
◾Lime wedges

1Put the salt on a small plate (preferably one just slightly larger than the top of your margarita glass). Run a wedge of lime around the top of your glass. Dip the top of the glass into the salt. Add ice cubes to your glass and set it aside.
2.Fill a small cocktail shaker with ice. Pour in the tequila, freshly squeezed blood orange and lime juice and agave nectar. Add a drop of vanilla extract
3.Put on the lid and shake for 30 seconds. Strain the liquid into your glass and garnish with a slice of blood orange.
Notes

•Recommended tequila: 100 percent agave silver tequila. The quality of the drink is directly related to the quality of the ingredients

Guacamole (about 4 servings)
3 avocados – peeled, pitted, and mashed
1 lime, juiced
1 teaspoon salt
1/2 cup diced onion
3 tablespoons chopped fresh cilantro
2 roma (plum) tomatoes, diced
1 teaspoon minced garlic
1 pinch ground cayenne pepper (optional)

1.In a medium bowl, mash together the avocados, lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper. Refrigerate 1 hour for best flavor

Salmon Taco’s
2 lb fresh salmon Fillet – Costco is great for this!
spinach tortillas (Trader Joes)
Trader Joes Brand Cilantro Dressing
One small head of cabbage shredded
Three carrots shredded
One small head of red cabbage shredded
2 limes
1 lemon
3 tbls butter
Fresh cilantro
two cups diced fresh mango
diced jalopeno
salt and pepper
Diced red onion

1. Lay the salmon fillet out on aluminum foil sprayed with cooking spray. Slice onion and place approximately three thin slices along the salmon.
2. place pats of butter along the salmon
3. salt and pepper the salmon
4. seal the foil around the salmon and place on cookie sheet and
put in a pre-heated oven (350) for about 25 – 30 minutes
5. Remove salmon and allow to rest for 5 minutes
6. Mix cabbage with cilantro dressing
7. Remove the lemon from the salmon and cut salmon into bite size pieces
8. Assemble the taco:
Place cabbage slaw on a tortilla, followed by salmon. Top with mango, onion, cilantro, and jalapeño. Drizzle more dressing if you wish. Fold tortilla and enjoy!
The first time I made this I did it with left over salmon from the night before and heated it by placing it on a griddle to crisp up the outside. It was fantastic! I also heated a can of black beans and mixed it with fresh roasted corn (Trader Joes)
