My youngest daughter did eventually go out today for a bit. I loaded down her car with blankets, hats, gloves, and hand warmers. She called me when she arrived at her destination only to tell me that when she got back home she would REALLY like something warm in her tummy. One of her favorites is good old Irish Colcannon. Enjoy!
2 pounds potatoes, peeled and cut into fourths
1/2 head cabbage rough chopped
6 slices bacon
1 large onion, chopped
1/2 cup milk (approximately)
Salt and pepper to taste
- Cover potatoes with water in a large pot and bring to a boil, until potatoes are tender.
- Brown bacon in a large, deep skillet. Remove bacon and crumble and set aside. In the reserved drippings, sauté the cabbage and onion until soft and translucent.
- Drain the cooked potatoes, mash with milk and season with salt and pepper. Fold in the bacon, cabbage, and onions.
- Serve it up in a bowl with a pat of butter on top.
