I have fond memories of my mum cooking in the kitchen. She got the following recipe from my Grandma Betty (Dad’s mom) and would make it a few times a year. Mum would place the noodles in the pot in batches. When she would turn away from the stove, we would try to sneak in and steal a bowl full. The laughs followed when she would turn around and chase us with her rolling pin and cloth yelling in her Scottish brogue,” Get your wee bums ooot my kitchen you sneaky wee pumps or I’ll get you wi’ me cloot! No sneaking my noodles!” Below is the beloved Chicken and Noodles recipe. I hope you share some good laughs and good food in your kitchen.
Chicken and Noodles – (Mary Fleming and Betty Fleming)
2 cups all purpose flour
3 egg yolks
2 tsp salt
1/2 cup water
1 stewing hen
1 large can chicken broth
Place cut up chicken in large pot with enough water to cover. Bring to a simmer. Simmer for 1 hour or until chicken is tender. Remove chicken and allow to cool. Remove chicken from the bone and return to the simmering pot. Add the chicken broth. Mix egg yolks, egg, salt and water in mixer. Add flour slowly while mixing until mixture thickens. Keep adding flour until combined. Dough will be wet. Turn out onto a well floured pastry cloth. Roll out dough and cut into noodles. I use a pizza cutter to cut the noodles. Add noodles to broth and simmer until cooked. Enjoy!
