Firecracker Shrimp

Better late than never! The fourth of July snuck up on me! Here is a dish that is an all time favorite. Easy, healthy, and fantastic.
2lb bag of cooked, peeled, tail on shrimp (medium to large size) – thawed
1 jar Mrs. Renfros whole pickled jalapeno’s (it MUST be Mrs. Renfros whole pickled jalapeno’s or it won’t taste the same…sorry :))
2 limes
1 tsp. kosher salt
1 bunch fresh cilantro rough chopped

Place the shrimp in a large plastic or glass bowl. Add the juice of two limes, cilantro, and salt. Take the pickled jalapeno’s and slice each in half. Pour the juice from the jar and the sliced jalapeno’s into the shrimp mixture. Mix and cover. Place in refrigerator for approximately four hours. Serve.
If I am traveling with this, I put the mixture in a large zip-lock and let it marinate in the refrigerator, then place it in the container upon arrival. Enjoy!
