I came upon this concept of grilling meatloaf when my girls were wee little. A fellow stay at home mom at the time shared her recipe with me. I never really liked meatloaf until this came along. I usually serve it with corn casserole and a side salad. The recipe below is what has evolved through the years.
2 lb ground beef
1 lb ground sausage
1 1/2 cup chicken flavored stuffing (I use stove top)
2 cups barbecue sauce
2 cups shredded cheddar cheese (or more if you like)
6 strips bacon cooked and crumbled and cooled
1 medium onion chopped (sautéed if you have the time however sometimes I just throw it in raw)
Mix all ingredients in a large bowl. I prefer to get my hands in there and squish it all together!
Place half the mixture in a disposable pie tin. Form meat into a doughnut shape. The hole in the middle helps it cook evenly and pools the grease. Do the same with the other half of the mixture.
Place pie tins on grill over medium high heat and close the cover. Check after 30 minutes. These should cook in 30 – 45 minutes. Making two allows you to freeze one for another meal. Sometimes if I have the grill up a little high the bottom gets crispy. These are my favorite parts!
