New Year Chili

Each year we get together with friends to welcome in the new year.  I put on a big pot of white chili and the house smells amazing!  Give this a try and you won’t be disappointed.  Sharing it with friends makes it even tastier!

1 tablespoon olive oil
1 onion, chopped
3 tablespoons minced garlic
1 (4 ounce) can chopped green chiles
2 teaspoons ground cumin
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper (optional)
2 (14.5 ounce) cans chicken broth
3 (15 ounce) cans great northern beans
1 cup shredded Monterey Jack cheese
chopped cilantro and sour cream for toppings
Take 2 to 3 pounds bone in chicken breast, place in stock pot and cover with the chicken broth.  Boil breasts until cooked.  Remove breasts from broth and let cool.  Strain broth if necessary and return to stock pot.  Saute onion until tender then mix in garlic, green chiles, cumin, oregano and cayenne.  Cook and stir mixture for about three minutes.  Add mixture  to broth in the stock pot.  Remove meat from bone and rough chop.  Add chicken and beans to stock pot.  Simmer for 30 minutes.  If you like thicker chili, blend two cans of great northern beans into a paste and stir into stock pot.  Simmer an additional 20 minutes.Serve chili topped with cilantro, cheese, and sour cream
